Jerusalem Artichokes are a beautiful Root Vegetable, also known as SunChoke, SunRoot & Earth Apple. They are a species of Sunflower native to Eastern North America and found abundantly in Eastern Canada. They may appear ugly although they have a delicious sweet and earthy, almost nutty flavour. Not only are they delicious, they are very nutritious. Packed with both pre-biotic insoluble, and soluble fiber called oligo-fructose inulin it can provide some roughage for cleansing out the gut and reducing cholesterol. Now what to do with these beauties? Roasting them is ideal for enhancing the sweet nuttiness of this root. Pairing them with olive oil, salt & pepper is the simplest way to show off their good looks. Boiling them and blending them with potatoes will add some sweetness and depth to your basic mash potatoes or even to sweet potatoes & parsnips. Other root vegetables will look and taste superior if you pair them with the Jerusalem Artichoke, for example you can roughly cut beets, carrots, parsnips & potatoes, toss in olive oil, salt & dried tarragon / fennel and bake until soft & golden on the edges.
These could also make for an interesting salad! Pair with arugula, soft goat cheese & top with balsamic! The possibilities are endless! We might suggest a hot cup of fennel tea afterwards to help ease the digestion of these nutritious nuggets as they have been known to ignite the engines!
